Eggplant Coriander Dip

There are no acceptable excuses why it is too cumbersome to
prepare a meal at home. Here in KL,
oftentimes we become so lazy because of the abundance of cheap, tasty and
accessible food that can be easily attained just by driving 3 minutes out of
our doorstep to the nearest coffeeshop.

“Make lunch from scratch, why all the trouble? Takes too
much time!” A familiar inner dialogue with yourself? It doesn’t really consume as much as you think if you follow
this leisurely timetable.

12:00 Drive out 3
minutes to the local grocery to get eggplants

12:06 Slice eggplant
into chunky squares. Drizzle with olive
oil and season with salt

12:08 Grill them
skin side down for 30 minutes. Place a
tray of sesame seeds on the lower level of oven to toast simultaneously. Watch TV or
read your favourite magazine

12:38 Mash grilled
eggplant, more oil, coriander, juice from half a lemon and toasted sesame seed in the food processor. Season with salt and pepper.

12:40 Slice bread and
tomatoes

12:41 Assemble your
meal and sprinkle with coarse sea salt.

12:42 Enjoy your meal
standing on the kitchen counter.

Not including the
grilling time, 12 minutes is all you need.
