Grilled Pork with Sage & Rosemary

A prescription for a soul longing to recuperate on a Sunday and reward itself for the good work done in the past week.

Grilled Pork with Sage and Rosemary

Start your day by massaging salt & freshly ground pepper into the
chops. Then throw in bruised rosemary, sage and minced garlic. Add some
extra virgin olive oil to fuse the flavours.

Curl up to read the Sunday newspapers and your favourite magazine (mine will be BBC Good Food).

Do some Sunday tidying around the home after week’s piled up mess.

Preheat oven to 210C on grill. Then lay pork chops on wire grill with a tray beneath to catch the drippings.

Turn chops over after about 12 minutes on one side, depending on thickness you can leave it for another 10.

While waiting, bring out your best china. (Stole my mom’s Noritake)

Don’t forget to lay out your best cutlery too. (Steak knives from WMF)

Once ready, sprinkle some Maldon Sea Salt and savour each slice of juicy pork as though you are in the French Laundry.
