Noodles for One

Dear Other Half,

It pleases me considerably to know that you now too purchase your groceries from reputable suppliers and understand the premium for superior food is clearly justifiable when compared to ‘meat sales’.

The smells of grilled burger patties and the scenes surrounding the whole roast pork van that sold those fabulous sandwiches at the Edinburgh Farmer’s market is still contained vividly within my senses.

Time blinks by so quickly as it is now a month you have been living and cooking on your own. Your food adventures, which you’d claim to be unadventurous, are always exciting to hear!

I do miss our Saturday lunch cook-outs before you headed overseas. Sometimes, it feels challenging to keep up the routine especially when cooking for just oneself. But rest assured, it is not myself to deny a wholesome home-cooked lunch just because my favourite lunch companion is no longer around.

Today I cooked this minced pork and spinach noodles. Having heard your complaints about the limited cooking repertoire you are working with, even though your skills improved tremendously in just one month, I thought of sharing this recipe with you. Hope the oriental taste will be refreshing from the usual pasta.

Clockwise from top :

  • Noodle dressing made from fish sauce, soy sauce and dark soya sauce
  • Stir-fried spinach with a twist of ground black pepper
  • Mince pork flavoured with soya and oyster sauce
  • Sesame seeds lightly toasted on the pan
  • Black bean noodles (Spaghetti would be a good substitue)

And just toss everything together!
