Vanilla Gelato with Belgian Choc Wafers

Gelato in Malaysia upsets me. No one understands that gelato should be smooth, creamy instead of icy, dry and artificially coloured.

JK and I have been hit by gelato fever. Trying to look for that authentic gelato. Out of desperation, we took the matter into our own hands.

Vanilla Gelato with Belgian Choc Wafers

2 cups fresh milk
1/4 cup sugar
3 egg yolks
2 tbsp vanilla essence
3 pieces belgian chocolate wafers

Whisk egg yolk and sugar in a bowl placed over a pot of boiling water.
Add vanilla essence into milk and scald till warm.
Once egg yolk & sugar mixture has turn pale yellow, add warm milk.
Keep stirring mixture until thick enough to coat back of a spoon.

Let custard mixture cool for several hours in fridge.

Churn cold custard in your ice-cream machine and add in crushed wafers midway.
