From Leftovers | Another Lemon Cake

There were many lemons leftover in the fridge and kindheartedly, I decided to embrace them all with my open arms. Often I dream of the day where I can pluck two ripen-on-the-tree lemons off its branch to grate its rind and squeeze every drop of its juice for a loaf like this one.

Some of you may prefer a slice for afternoon tea, but I like to have mine in the wee hours of the night when I sneak into the kitchen silently. That was my little secret nightly excursions that contributed to the rapid disappearance of the loaf pictured above.
