Picked this up from Peckhams in Edinburgh earlier the year. Single estate cocoa has more of a distinct identity and palate compared to a customised blend. With a blend, the palate is probably pre-determined by the chocolatier and he mixes and matches until the ideal balance is achieved. Meanwhile, single estate chocolates are made to bring to the limelight the particular character of the cocoa beans.

I just finished a piece of Amedei 9, a blend of cocoa from nine plantations and a few minutes later, I ate the last piece of this Kshocolat Reserve sourced from a plantation in Sao Tome, a small African island. It is a sovereign country with a population of about 200,000 with Portuguese as their main language.

Now, who says we only eat for eating sake? There can always be more geography to learn.
