Evolution of Pineapple Tarts

Every year, before we get over the christmas and year end
celebrations, Chinese New Year comes around the corner quicker than
expected.

With age, these upcoming 15 days of feasting, reunions and
celebrations don’t provide as much excitement compared to when we were
younger. Then again, getting excited altogether about anything becomes
more of a challenge as we step into adulthood.

My memories of pineapple tarts, the jewel of all new year cookies,
are often of ration. To ensure that the scales don’t tip into horror
and also these tarts are not cheap!

In my teens, pineapple tarts were shaped as a round base of pastry
topped with a generous dollop of jam and garnished with a pastry cross
on its dome. I would bite away all the pastry on the side then save the
pineapple dome for last.

Then within the recent years, pineapple tarts have evolved. Pastry
was rolled around the jam, into a shape of a miniature swiss roll.
There were no chance of saving the best for last here, it’s just one
gulp. Enjoying the best of both pastry and jam in a mouthful.

This year, the creative and dedicated geniuses who monopolize the
pineapple tart supply during Chinese New Year has gone a step further.
Now, you can enjoy pastry and jam in one bite, and the aesthetics! We
humans are drawn towards beautiful things, these tarts have been
drawing my mouth towards them…
