Vermicelli with Grilled Lemongrass Chicken

Time was up for me to use my credit card reward points. It was a big fright to know that I chalked up THAT many points!

So my new Philips Cucina Kitchen Processor arrived in exchange of many many points. To put my equipment on its
maiden spin, I thought hard of a dish which I’d rather not do due to
its endless chopping and slicing.

Cucumber and carrot were sliced and shredded, peanuts roasted then
chopped and even romaines were not spared the merciless chopper.

While playing master to the mean machine, chicken slices were left to
marinade with some lemongrass, garlic, fish sauce and a dash of dark
soya sauce. Mix in chopped peanuts and grill for 20 minutes.

Dress up the pre-soaked vermicelli with 2 slices of super hot
vietnamese chilli, fish sauce, sugar water and 2 freshly squeezed
limes.

Don’t ever forget the fresh mint to create that authentic Vietnamese taste!
