Roasted Tomatoes

Roasting could not be best categorised as fast food,
but it can be definitely called simple. The flavour that you’ll get
depends on how good those tomatoes were. Ideally vine-ripen or
oval-shaped romas would give you tomatoes bursting with sweetness.

I made these to be added as dressing for a clean, fast and fresh
flavoured vegetarian tagliatelle dinner. Good for when you’ve had
enough of complex french food or over-dressed restaurant chinese
cuisine.

Roasted Tomatoes with Thyme

Whole riped tomatoes, slit an ‘X’ across on each

A few sprigs fresh thyme

Extra virgin olive oil

Some chopped garlic

A generous pinch of sea salt

Arrange the tomatoes on a roasting plate.

Sprinkle garlic, thyme and salt.

Drizzle generously olive oil into each tomato.

Roast at 210C for about 30-40 minutes.

You can quarter the tomatoes when ready.
